How do you know whether to have white or red wine with a meal?

White wine is supposed to be served with white meats such as fish, chicken, etc., and red wine with red meat as it's more robust in flavor.
I feel the best approach is what's actually pleasing to your palate and taste buds and have what you wish not something that's neither here nor there and etched in stone.
I'm beginning to get a fuzzy tongue from all these drink questions. Again, just kidding.
I was always told that red wines compliment the red meats and white wine compliments the white meats--chicken, pork, fish.

You're both right, (Avis and Sandra). Reds are 'recommended' with heavier foods (red meats, stews, etc.) and whites with 'lighter' foods (chicken, fish, etc.) to enhance the 'marriage' of flavors between said foods and wine.
However, as a legit (honest!) sommelier, there are no such rules. It's more about your pallet (what your mouth enjoys) than it is what's "right".
As a good waiter, one should always offer options to guests: one of each!
P.S. no boxed wines please!
