Christening a boat with a champagne bottle smashed against its bow, has its origins in a Viking human bloody sacrifice of a young boy who was likewise smashed head first against the bow to offer the Gods a life, so that others' lives would not be later taken or lost onboard during its voyage.
Superstition can reflect a nightmarish reality...

Knock on wood, that's great!
I engage in constant genuflection, which I interpret as a blessing against evil, and rather the intersection of God and man than an electric chair execution symbol.
Well, you already informed me about my one superstition. I just can't seem to help myself knocking on wood. But it doesn't happen on a daily basis. Other than that, I don't think I have another superstition.
when the left hand is itchy rub it on your left knee and say bring it to me cash
Left hand itches means loss of cash; right hand itches means gain of cash.
Ears itch, someone's talking about you; nose itches, there's going to be a fight; butt itches, time to take a shower.
I give some superstitions a passing glance (just in case) but don't allow them entree into my observation of life. I think they are used mainly to remind our own selves of something.
Great philosophical question Paul.

I drink coffee when I wake up because I believe it will taste delicious and wake me up and it does. But seriously, I don't think I am superstitious. Hmm, maybe I'm delusional - especially if I think I'm going to get 600 points for this answer!!
