My science teacher in high school said it was quite a while. Much depends on the environment in which they find themselves (the moister the longer) and how recently they last consumed food. I don't think there can be any set amount of time because of the many variables. The important fact is that they CAN live for a time without their heads. Did you know that they are also very resistant to radiation from atomic decay? That's why some people think that one day cockroaches will rule the earth. :)

Cockroaches do not have blood pressure, They have an open circulatory system. Their necks would seal off just by clotting.

Cockroaches breathe through spiracles, or little holes in each body segment.

Cockroaches are cold-blooded and need much less food than humans do.

Decapitated American cockroaches (Periplaneta americana) with their neck wound sealed with dental wax survived in a jar for several weeks.

Cockroaches nerves are not connected like humans, instead theirs are individual to each part of their bodies and can function as normal.

If given nutrients and refrigerated, a decapitated roach head can last even longer than the body.
