What is the proper way to safely store leftover turkey?

Work with leftover turkey with clean hands. Remove all stuffing from the cavity and neck pouch. Once the stuffing is removed and placed in a tightly covered storage container, refrigerate. Plan on using the stuffing up within two or three days. Remove all turkey meat from bones. Boil out the bones for soup and freeze liquid or keep for a couple of days in fridge. Place the turkey meat on a platter or portion into several containers. If on a platter, cover tightly with heavy duty plastic wrap or aluminum foil. An option would be to dice the meat, depending on planned use. Then refrigerate or freeze immediately. Use up refrigerated turkey meat in 3 or 4 days.
